ECA Travel is looking forward to welcoming Chef Loredana to host cooking classes this March. She takes inspiration for her delicious dishes from memories of her childhood in Italy. She still resides in the Tuscan countryside with her husband, Massimo, and her two children, Niccolò and Matteo.
Loredana is a firm believer in the proverb “you are what you eat”, so the quality of the products used in her cooking is a reflection of that. Loredana is also a member of the Slow Food movement. Slow Food is an organization that promotes local food and traditional cooking. Read more about it on their website, https://www.slowfood.com/.
Tuscany and other regions of Italy are highlighted in all of Loredana’s cooking, using only seasonal products to create the most magical flavors. Imagine eating bright red bruschetta in July, cooked with tomatoes colored by the summer sun or enjoying perfectly ripened, fresh yellow pumpkin soup in the crisp Autumn.
What drives Loredana’s passion for cooking is her fondest childhood memories of the fresh onion her grandmother browned, waiting for the sweet tomatoes to be added- the scents that serve as some of her dearest memories are scents she brings to the kitchen as she teaches her cooking techniques to others.
As a child, seasoned gnocchi lined a long table in Loredana’s grandmother’s house, fragrant focaccia baked in the oven, and family gathered to enjoy delicious meals. To this day, Loredana carries on the traditions and brings it to us for all to enjoy! We look forward to having her expertise in the kitchen this March and hope you will be able to join.
